Ingredients:
2 boneless, skinless chicken breasts, sliced into strips
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp cumin
1 tsp smoked paprika
1 tsp oregano
½ tsp black pepper
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
4 large flour tortillas
Instructions:
Cook the chicken: Heat olive oil in a pan over medium heat. Add chicken, garlic, cumin, paprika, oregano, and black pepper. Cook until golden and fully cooked.
Sauté the veggies: Add the bell peppers and onion to the same pan and cook until slightly tender.
Assemble the quesadilla: Place a tortilla on a flat surface, sprinkle cheese on half, add the chicken and veggies, then top with more cheese. Fold the tortilla in half.
Cook the quesadilla: Heat a clean pan over medium heat. Cook each side for about 2-3 minutes until golden brown and crispy, and the cheese is melted.
Serve: Cut into wedges and enjoy with salsa, sour cream, or guacamole.
