Ingredients
For the muffin batter:
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ cup granulated sugar
1 teaspoon ground cinnamon
½ cup melted butter
1 cup milk
1 egg
1 teaspoon vanilla extract
For the cinnamon filling:
⅓ cup brown sugar
1½ teaspoons ground cinnamon
2 tablespoons melted butter
For the glaze:
½ cup powdered sugar
1 tablespoon milk
½ teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (180°C) and grease a muffin tin or line with cupcake liners.
Prepare the filling: In a small bowl, mix brown sugar, cinnamon, and melted butter. Set aside.
Make the batter: In a large bowl, whisk together flour, baking powder, baking soda, sugar, and cinnamon.
In another bowl, whisk melted butter, milk, egg, and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined (do not overmix).
Assemble the muffins: Spoon a tablespoon of batter into each muffin cup, add a teaspoon of the cinnamon filling, and top with more batter until ¾ full.
Bake for 18-20 minutes or until a toothpick comes out clean.
Make the glaze: Mix powdered sugar, milk, and vanilla until smooth.
Drizzle the glaze over warm muffins and enjoy!
