Baked Feta Chickpeas

A simple, hearty, and flavorful dish with creamy feta, roasted chickpeas, and Mediterranean spices—all baked to perfection!

Ingredients:

✔ 1 can (15 oz) chickpeas (drained & rinsed)

✔ 1 block (6-8 oz) feta cheese

✔ 1 cup cherry tomatoes (halved)

✔ 2 cloves garlic (minced)

✔ 2 tbsp olive oil

✔ 1 tsp dried oregano

✔ ½ tsp red pepper flakes (optional)

✔ ½ tsp black pepper

✔ Juice of ½ lemon

✔ Fresh parsley (for garnish)

Instructions:

1️⃣ Preheat the Oven:

Set to 400°F (200°C).

2️⃣ Prepare the Dish:

In a baking dish, toss chickpeas, cherry tomatoes, garlic, olive oil, oregano, red pepper flakes, and black pepper.

Place feta in the center, drizzle with a little extra olive oil.

3️⃣ Bake:

Bake for 20-25 minutes, until feta is soft and tomatoes are roasted.

4️⃣ Mix & Serve:

Squeeze fresh lemon juice over everything.

Lightly mash the feta and mix with chickpeas.

Garnish with fresh parsley.
