Ingredients:
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
2 tablespoons milk
36 miniature peanut butter cups, unwrapped
Directions:
Preheat the oven to 350°F (175°C). Line mini muffin tins with paper liners.
In a medium bowl, whisk together the flour, salt, and baking soda. Set aside.
In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and creamy peanut butter until light and fluffy.
Beat in the egg, vanilla extract, and milk until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll the cookie dough into 1-inch balls and place each ball into the mini muffin cups.
Bake in the preheated oven for 10 to 12 minutes or until the edges are golden.
Immediately upon removing from the oven, press a miniature peanut butter cup into the center of each cookie.
Allow the cookies to cool completely in the muffin tins before removing.
Once cooled, gently twist the cookies to remove them from the muffin cups.
