Healthy Chocolate Chip Oatmeal Bars

Thick, chewy, and made with wholesome ingredients, these Healthy Chocolate Chip Oatmeal Bars are the perfect sweet dessert or healthy snack option!

Ingredients:

– 2 cups quick cooking oats

– 1 teaspoon baking powder

– 1 egg

– ¾ cup nut butter (almond, peanut, or cashew)

– ¾ cup pure maple syrup or honey

– 1 teaspoon vanilla extract

– ¾ cup dark or semi-sweet chocolate chips

– Flaky sea salt, for topping

Directions:

1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.

2. In a large bowl, combine the oats and baking powder.

3. In a separate bowl, whisk the egg, then mix in the nut butter, maple syrup or honey, and vanilla extract until smooth.

4. Pour the wet ingredients into the dry ingredients and stir until well combined.

5. Fold in ½ cup of the chocolate chips.

6. Spread the mixture evenly in the prepared baking dish. Sprinkle the remaining ¼ cup chocolate chips on top.

7. Bake for 30 minutes, or until the edges are golden brown.

8. Remove from the oven and immediately sprinkle with flaky sea salt.

9. Allow to cool completely before slicing into 9 bars.
