Cottage Cheese Brownies

Ingredients:

¾ cup (180 g) cottage cheese

1 large egg

½ cup (45 g) cocoa powder

⅓ cup (80 g) granular sweetener (e.g., monk fruit sweetener)

Optional:

½ tsp baking powder

½ tsp coffee powder

Pinch of salt

Chocolate chips for topping

Directions:

Preheat oven to 350°F (180°C). Line a 7-inch (15 cm) square brownie pan with parchment paper.

In a blender, combine cottage cheese, egg, cocoa powder, and sweetener. Add optional ingredients if desired. Blend until smooth.

Pour the batter into the prepared pan. Sprinkle chocolate chips on top if using.

Bake for 22 to 30 minutes, or until a toothpick inserted into the center comes out clean.

Allow to cool completely at room temperature before slicing.
