Ingredients:
– 1 1/2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup shredded mozzarella cheese
– 1/2 cup shredded cheddar cheese
– 1 cup plain yogurt or Greek yogurt
– 2 tablespoons olive oil (plus extra for cooking)
– 1 teaspoon dried oregano (optional)
Directions:
In a large bowl, whisk together flour, baking powder, and salt.
Add shredded mozzarella, cheddar cheese, and dried oregano. Mix well.
Stir in yogurt and olive oil until a soft dough forms. If too sticky, add a little more flour.
Divide dough into two equal portions and shape each into a flat round about 1/2-inch thick.
Heat a non-stick skillet over medium heat and lightly brush with olive oil.
Cook each round for 6-8 minutes per side, or until golden brown and cooked through. Adjust heat as needed to avoid burning.
