Description

Ingredients

  • 1 pound ground Italian sausage
  • 1 tablespoon olive oil (if needed)
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 34 cups diced potatoes
  • 2 cups chopped kale
  • Salt and freshly ground black pepper, to taste

Instructions

  • Cook the Sausage: In a large stockpot over medium-high heat, cook the Italian sausage until browned and cooked through. Transfer to a plate, leaving about 1 tablespoon of grease in the pot.
  • Sauté Aromatics: Add the diced onion and sauté for 5 minutes until translucent. Stir in minced garlic and cook for 1 more minute.
  • Add Potatoes and Stock: Pour in the chicken stock and add diced potatoes. Bring to a simmer and cook for about 10 minutes until potatoes are tender.
  • Incorporate Kale and Cream: Stir in the chopped kale and heavy cream. Simmer for 5 minutes until the kale is wilted. Season with salt and pepper.
