Ingredients
- 1 pound ground Italian sausage
- 1 tablespoon olive oil (if needed)
- 1 medium white onion, diced
- 3 cloves garlic, minced
- 4 cups chicken stock
- 1 cup heavy cream
- 3–4 cups diced potatoes
- 2 cups chopped kale
- Salt and freshly ground black pepper, to taste
Instructions
- Cook the Sausage: In a large stockpot over medium-high heat, cook the Italian sausage until browned and cooked through. Transfer to a plate, leaving about 1 tablespoon of grease in the pot.
- Sauté Aromatics: Add the diced onion and sauté for 5 minutes until translucent. Stir in minced garlic and cook for 1 more minute.
- Add Potatoes and Stock: Pour in the chicken stock and add diced potatoes. Bring to a simmer and cook for about 10 minutes until potatoes are tender.
- Incorporate Kale and Cream: Stir in the chopped kale and heavy cream. Simmer for 5 minutes until the kale is wilted. Season with salt and pepper.
Notes
- For extra spice, use hot Italian sausage or add red pepper flakes.
- Substitute kale with spinach or Swiss chard for a milder taste.
- Use turkey sausage and half-and-half for a lighter version.
- Store in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop.
