Description
A tender, boneless turkey breast rolled with a savory herb, spinach, and Parmesan stuffing, baked until golden and juicy. Elegant enough for holidays, quick enough for weeknights.
Ingredients
2 pounds turkey breast, boneless and skinless
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup spinach, chopped
1/2 cup breadcrumbs (or gluten-free breadcrumbs)
1/4 cup grated Parmesan cheese
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth
1 tablespoon butter, melted
1 tablespoon Dijon mustard (optional)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay the turkey breast flat on a cutting board, butterflying if needed for even thickness.
- In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté 2-3 minutes until soft.
- Stir in spinach; cook about 2 minutes until wilted. Set aside to cool slightly.
- In a bowl, combine spinach mixture, breadcrumbs, Parmesan, thyme, rosemary, salt, pepper, and chicken broth to form stuffing.
- Spread stuffing evenly over turkey breast, roll tightly, and secure with toothpicks or kitchen twine.
- Place roulade seam-side down on baking sheet, brush with melted butter, and optionally spread Dijon mustard over top.
- Bake 35-40 minutes, until internal temperature reaches 165°F (74°C).
- Rest 5-10 minutes before slicing and serving.
Notes
Chill the rolled turkey for 10-15 minutes before baking to help it hold shape.
Can be assembled a day in advance and stored in the refrigerator before baking.
Swap spinach for kale, Swiss chard, or mushrooms for variation.
Replace Parmesan with feta or cheddar for a different flavor profile.
Add dried cranberries or chopped nuts for a festive touch.
For low-carb, omit breadcrumbs and add extra vegetables.
