Description

A tender, boneless turkey breast rolled with a savory herb, spinach, and Parmesan stuffing, baked until golden and juicy. Elegant enough for holidays, quick enough for weeknights.


Ingredients

2 pounds turkey breast, boneless and skinless

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup spinach, chopped

1/2 cup breadcrumbs (or gluten-free breadcrumbs)

1/4 cup grated Parmesan cheese

1 tablespoon fresh thyme, chopped

1 tablespoon fresh rosemary, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chicken broth

1 tablespoon butter, melted

1 tablespoon Dijon mustard (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Lay the turkey breast flat on a cutting board, butterflying if needed for even thickness.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté 2-3 minutes until soft.
  4. Stir in spinach; cook about 2 minutes until wilted. Set aside to cool slightly.
  5. In a bowl, combine spinach mixture, breadcrumbs, Parmesan, thyme, rosemary, salt, pepper, and chicken broth to form stuffing.
  6. Spread stuffing evenly over turkey breast, roll tightly, and secure with toothpicks or kitchen twine.
  7. Place roulade seam-side down on baking sheet, brush with melted butter, and optionally spread Dijon mustard over top.
  8. Bake 35-40 minutes, until internal temperature reaches 165°F (74°C).
  9. Rest 5-10 minutes before slicing and serving.

Notes

Chill the rolled turkey for 10-15 minutes before baking to help it hold shape.

Can be assembled a day in advance and stored in the refrigerator before baking.

Swap spinach for kale, Swiss chard, or mushrooms for variation.

Replace Parmesan with feta or cheddar for a different flavor profile.

Add dried cranberries or chopped nuts for a festive touch.

For low-carb, omit breadcrumbs and add extra vegetables.
