Ingredients

  • 2 cups cooked turkey, chopped
  • 2 ribs celery, diced
  • 1 medium onion, chopped
  • 2 large carrots, sliced
  • 6 cups turkey broth (or chicken broth)
  • 2 cups egg noodles
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • 1 tsp fresh thyme (or ½ tsp dried)
  • ¼ tsp red pepper flakes (optional)
  • 2 bay leaves
  • Salt & pepper, to taste

Instructions

  • Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion, celery, and garlic; sauté until translucent.
  • Add Carrots & Spices: Stir in sliced carrots, rosemary, thyme, red pepper flakes, bay leaves, salt, and pepper.
  • Combine Turkey & Broth: Add chopped turkey and broth, stirring to combine.
  • Simmer: Bring to a boil, then reduce heat and let simmer for 20 minutes.
  • Cook Noodles: Add egg noodles and cook according to package instructions until al dente.
  • Serve: Remove bay leaves, adjust seasoning if needed, and serve hot.

Notes

  • Substitute chicken for turkey if preferred.
