Ingredients
- 2 cups cooked turkey, chopped
 - 2 ribs celery, diced
 - 1 medium onion, chopped
 - 2 large carrots, sliced
 - 6 cups turkey broth (or chicken broth)
 - 2 cups egg noodles
 - 1 tbsp olive oil
 - 2 cloves garlic, minced
 - 1 tsp fresh rosemary (or ½ tsp dried)
 - 1 tsp fresh thyme (or ½ tsp dried)
 - ¼ tsp red pepper flakes (optional)
 - 2 bay leaves
 - Salt & pepper, to taste
 
Instructions
- Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion, celery, and garlic; sauté until translucent.
 - Add Carrots & Spices: Stir in sliced carrots, rosemary, thyme, red pepper flakes, bay leaves, salt, and pepper.
 - Combine Turkey & Broth: Add chopped turkey and broth, stirring to combine.
 - Simmer: Bring to a boil, then reduce heat and let simmer for 20 minutes.
 - Cook Noodles: Add egg noodles and cook according to package instructions until al dente.
 - Serve: Remove bay leaves, adjust seasoning if needed, and serve hot.

- Substitute chicken for turkey if preferred.
