Ingredients

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsweetened cocoa powder
  • ½ cup whole milk (room temperature)
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Mousse:

  • 8 ounces dark chocolate (70% cocoa), melted
  • 8 ounces milk chocolate, melted
  • 8 ounces white chocolate, melted
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Optional Glaze (for topping):

  • 1 cup semisweet chocolate chips
  • 1 tablespoon unsalted butter

Instructions

Preparing the Cake:

  1. Preheat the oven to 350°F (180°C). Grease and line a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cocoa powder.
  3. Add milk, eggs, and vanilla extract, mixing until smooth and well combined.
  4. Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick inserted comes out clean. Cool completely before assembly.

Making the Mousse Layers:

  1. Melt dark, milk, and white chocolate separately. Allow each to cool slightly.
  2. In a separate bowl, whip the heavy cream with sugar and vanilla until stiff peaks form.
  3. Divide whipped cream into three portions, folding each portion into a different melted chocolate to create three mousse flavors.

Assembling the Cake:

  1. Place the cooled cake on a serving plate or inside a springform pan.
  2. Spread the dark chocolate mousse evenly over the cake, followed by the milk and white chocolate mousse.
  3. Smooth the top and refrigerate for 2–4 hours until set.

Optional Glaze:

  1. Melt the chocolate chips and butter together until smooth.
  2. Pour the glaze over the chilled mousse cake and spread evenly. Chill until the glaze firms up.

Notes

  • You can add fresh fruit between the mousse layers for a fruity contrast.
  • Experiment with different flavored chocolates for unique variations.
  • The cake can be made a day in advance, with mousse layers prepared ahead of time as well.
