- ½ cup unsweetened cocoa powder
- ½ cup whole milk (room temperature)
- 2 large eggs
- 1 teaspoon vanilla extract
For the Mousse:
- 8 ounces dark chocolate (70% cocoa), melted
- 8 ounces milk chocolate, melted
- 8 ounces white chocolate, melted
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
Optional Glaze (for topping):
- 1 cup semisweet chocolate chips
- 1 tablespoon unsalted butter
Instructions
Preparing the Cake:
- Preheat the oven to 350°F (180°C). Grease and line a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cocoa powder.
- Add milk, eggs, and vanilla extract, mixing until smooth and well combined.
- Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick inserted comes out clean. Cool completely before assembly.
Making the Mousse Layers:
- Melt dark, milk, and white chocolate separately. Allow each to cool slightly.
- In a separate bowl, whip the heavy cream with sugar and vanilla until stiff peaks form.
- Divide whipped cream into three portions, folding each portion into a different melted chocolate to create three mousse flavors.
Assembling the Cake:
- Place the cooled cake on a serving plate or inside a springform pan.
- Spread the dark chocolate mousse evenly over the cake, followed by the milk and white chocolate mousse.
- Smooth the top and refrigerate for 2–4 hours until set.
Optional Glaze:
- Melt the chocolate chips and butter together until smooth.
- Pour the glaze over the chilled mousse cake and spread evenly. Chill until the glaze firms up.
Notes
- You can add fresh fruit between the mousse layers for a fruity contrast.
- Experiment with different flavored chocolates for unique variations.
