Description

A moist, tender, and perfectly sweet banana bread made with ripe bananas, a hint of vanilla, and a touch of cinnamon. Ideal for breakfast, dessert, or a comforting snack.


Ingredients

3 ripe bananas, mashed

2 eggs

1/3 cup melted butter or vegetable oil

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar

1/2 teaspoon cinnamon (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until mostly smooth with a few small chunks.
  3. Stir in melted butter or oil, eggs, and vanilla extract until well combined.
  4. Add baking soda, salt, cinnamon, granulated sugar, and brown sugar. Mix until incorporated.
  5. Gently fold in the flour, being careful not to overmix the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For added flavor, mix in chocolate chips, chopped walnuts, or swirl in peanut butter or Nutella before baking.

Replace half the flour with whole wheat flour for a healthier version.

Store at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze slices for up to 3 months.

To reheat, warm a slice in the microwave for 15–20 seconds.
