Ingredients

For the Fries:

  • 2 tsp paprika
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 lb frozen French fries
  • 1/4 tsp cayenne pepper (optional)

For the Nacho Cheese Sauce:

  • 1 tbsp salted butter
  • 1 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz sharp cheddar cheese, shredded
  • 1 tbsp pickled jalapeño brine

Instructions

  • Preheat your oven to 450°F (230°C). Spread the frozen fries in a single layer on a baking sheet.
  • Mix the spices: In a small bowl, combine paprika, salt, chili powder, garlic powder, onion powder, and cayenne pepper (optional). Toss the fries in the seasoning mixture until evenly coated.
  • Bake the fries: Place the fries in the oven and bake for 25-30 minutes, or until crispy and golden brown.
  • Make the cheese sauce: While the fries are baking, melt butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute to form a roux.
  • Gradually add the milk, stirring constantly until the sauce thickens (3-5 minutes).
  • Stir in the cheese and jalapeño brine, continuing to cook until the sauce is smooth and creamy.
  • Serve the fries with the warm cheese sauce.

Notes

  • Variations:
    • Loaded Nacho Fries: Add seasoned beef, grilled chicken, or beans along with guacamole and sour cream for a heartier dish.
    • Spicy Twist: Opt for pepper jack cheese and increase the cayenne for extra heat.
    • Healthier Options: Air fry the fries, use baked fries, or opt for low-fat cheese.
    • Vegan Version: Substitute with plant-based cheese, dairy-free butter, and almond milk.
  • Storage and Reheating:
    • Store the fries and cheese sauce separately in airtight containers.
    • For best crispiness, reheat the fries in the oven or air fryer.
    • Reheat the sauce gently on the stovetop with a splash of milk to restore creaminess.
