Ingredients
1 pie crust (store-bought or homemade)
2 tablespoons butter
2 large sweet onions, thinly sliced
1 teaspoon olive oil
4 large eggs
1 cup heavy cream
1/2 cup milk
1/2 cup grated Gruyère cheese
1 tablespoon fresh thyme leaves
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust in a 9-inch tart or pie pan and set aside.
- In a large skillet, heat the butter and olive oil over medium heat. Add the onions and cook, stirring occasionally, for about 15-20 minutes, or until the onions are soft and caramelized. Set aside to cool slightly.
- In a large mixing bowl, whisk together the eggs, heavy cream, milk, salt, and pepper. Stir in the Gruyère cheese, thyme, and parsley.
- Add the caramelized onions to the egg mixture and stir to combine.
- Pour the egg and onion mixture into the prepared pie crust.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set in the center and lightly browned on top.
- Let the quiche cool for 10 minutes before slicing and serving.
Notes
For a heartier version, add cooked bacon or sausage to the quiche mixture.
