Description

Sweet Matzo Brei is a delightful twist on the classic Passover dish, perfect for breakfast or brunch. Soaked in milk, eggs, and spices, and then fried to golden perfection, this sweet and comforting recipe is a must-try for Passover celebrations or anytime you’re craving a warm, satisfying treat.

Ingredients

  • 5 matzo sheets
  • 1 cup milk (or more as needed)
  • 2 large eggs
  • 2 tablespoons ground cinnamon (or to taste)
  • 2 tablespoons white sugar (or to taste)
  • 1 teaspoon vanilla extract
  • ½ cup butter

Instructions

  • Pass the matzo sheets under cool running water briefly, then crumble them into a large bowl.
  • Stir in the milk, eggs, cinnamon, sugar, and vanilla to form an evenly moist batter. Add more milk if the batter is too dry.
  • Heat butter in a large skillet over medium heat. Scoop a generous spoonful of batter into the hot butter and flatten with the back of a spatula. Cook until golden brown, 3 to 5 minutes per side. Repeat with the remaining batter.

Notes

  • Variations: Try sugar-free versions with stevia and almond milk, or flavored creamers for a unique taste. You can also add fruits like apples or berries to the batter.
  • Dairy-Free: Substitute margarine for butter and almond milk for regular milk.
  • Storage/Reheating: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave.
