Ingredients
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup rice vinegar
- 1/2 cup water
- 1/2 cup sugar
- 2 tablespoons soy sauce
- 1 tablespoon sambal oelek (or other chili garlic sauce)
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons water (for cornstarch slurry)
Instructions
- Blend the Sauce Base: In a blender, combine pineapple chunks, rice vinegar, water, sugar, soy sauce, sambal oelek, and minced garlic. Blend until smooth.
- Cook the Sauce: Pour the blended mixture into a saucepan. Bring to a boil over medium heat.
- Make a Slurry: In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.
- Thicken the Sauce: Once the sauce boils, reduce heat to low and stir in the cornstarch slurry. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
- Cool and Store: Remove from heat and let the sauce cool. Transfer to a jar or bottle and refrigerate until ready to use.
Notes
- Heat Level: Adjust the heat by adding more or less sambal oelek (or substitute with another chili garlic sauce).
- Sweetness Adjustment: Modify the sugar to taste, or try honey or maple syrup for a different sweetness.
- Storage: The sauce can be stored in the refrigerator for up to 2 weeks. Reheat gently on low heat before serving.
- Freezing: This sauce freezes well for up to 3 months. Thaw in the refrigerator before use.
