For the Cake:
- 1 ¾ cups all-purpose flour
- 1 ½ cups sugar
- ¾ cup unsweetened cocoa powder (preferably dark or black cocoa)

- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water

- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- ½ cup cocoa powder
- 2 tsp vanilla extract
- 4–5 tbsp milk or heavy cream
Instructions
- Prepare Cake Batter: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Mix Wet Ingredients: Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth. Carefully stir in the boiling water (the batter will be thin).
- Bake: Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Make the Frosting: In a medium bowl, beat the softened butter with the powdered sugar and cocoa powder until smooth. Add vanilla extract and 4 tablespoons of milk or heavy cream, then beat until light and fluffy. Add more milk if needed to achieve the desired consistency.
- Assemble the Cake: Once the cakes have completely cooled, frost the top of one cake layer. Place the second cake layer on top and frost the entire cake, smoothing the frosting evenly over the surface and sides.

- Freezing: You can freeze individual slices or the whole cake for up to 3 months. Wrap it tightly in plastic wrap and aluminum foil to prevent freezer burn. Thaw in the fridge overnight before serving.
