Ingredients
1 lb ground beef
1 cup white rice
2 cups beef broth
1 onion, chopped
2 cloves garlic, minced
2 bell peppers (red, yellow, or green), chopped
1 can (14.5 oz) diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 1/2 cups shredded cheddar cheese
1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
- Add the chopped onion and garlic to the skillet with the beef, cooking for another 2-3 minutes until the onion softens.
- Stir in the chopped bell peppers, diced tomatoes (with juice), rice, beef broth, oregano, basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 10-15 minutes, or until the rice is partially cooked and the liquid is mostly absorbed.
- Transfer the beef mixture to a greased 9×13-inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
- Cover the dish with foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve warm, garnished with extra fresh herbs if desired.
