Whether it’s a celebration or a simple treat, this dessert is a guaranteed crowd-pleaser!

Ingredients

Cake:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 cup unsalted butter, cold & cubed
  • 1/2 cup whole milk
  • 1 egg
  • 1 tsp vanilla extract

Whipped Cream:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Topping:

  • 2 cups fresh strawberries, sliced
  • 2 tbsp sugar (for macerating)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  • In a large mixing bowl, combine the flour, sugar, and baking powder.
  • Add the cold, cubed butter to the dry ingredients and cut it in until the mixture is crumbly.
  • Stir in the milk, egg, and vanilla extract to form a smooth batter, then pour into the prepared cake pan.
  • Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
  • For the whipped cream, chill a mixing bowl and beat together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Slice the cooled cake horizontally. Spread a layer of whipped cream on the bottom layer.
  • Arrange half of the sliced strawberries over the whipped cream, then top with the second layer of cake.
  • Spread the remaining whipped cream and decorate with the remaining strawberries.

Notes

  • For a gluten-free version, use a gluten-free flour blend.
  • For a dairy-free variation, substitute dairy-free butter and whipped cream.
  • Feel free to swap strawberries with other berries like blueberries or raspberries.
  • Try drizzling chocolate syrup on top for an indulgent twist.
