Ingredients

For the Strawberry Base:

  • 2 cups fresh strawberries, hulled & sliced
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup strawberry purée (from the strawberry base)

Instructions

Prepare the Strawberry Base:

  1. In a bowl, mix sliced strawberries, sugar, and lemon juice.
  2. Let the mixture sit for 15 minutes to macerate and release natural juices.

Make the Strawberry Purée:

  1. Blend the macerated strawberries until smooth.
  2. Measure ½ cup of purée for the ice cream base and set aside.

Prepare the Ice Cream Base:

  1. In a large bowl, whisk together heavy cream, whole milk, sugar, and vanilla extract until sugar dissolves.

Combine & Churn:

  1. Stir in ½ cup of strawberry purée and mix well.
  2. Pour mixture into an ice cream maker and churn according to manufacturer’s instructions (typically 20-25 minutes).

Freeze & Serve:

  1. Transfer churned ice cream to an airtight container.
  2. Freeze for at least 2 hours until firm.
