Ingredients
- 8 oz cream cheese or coconut cream
- 4 oz yogurt or additional cream cheese/coconut cream
- 1 cup powdered sugar or sugar-free alternative
- 5 medium-sized strawberries
- Optional: 1/4 tsp vanilla bean paste
Instructions
- If using cream cheese, bring it to room temperature. If using coconut cream, ensure it’s thick and creamy.
- Remove the stems from the strawberries and puree them until smooth.
- In a bowl, combine the strawberry puree with the remaining ingredients. Blend until the mixture is smooth and forms stiff peaks (if using hand beaters).
- Divide the mousse into serving dishes and refrigerate for at least 1 hour. The mousse will thicken as it chills.
Notes
- Vegan Option: Replace dairy ingredients with plant-based alternatives like coconut cream or vegan cream cheese.
- Keto-Friendly Option: Use a powdered monk fruit or allulose blend instead of sugar.
- Berry Variations: Try substituting or adding raspberries, blueberries, or blackberries for a mixed berry flavor.
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Freezing may alter the creamy texture.
