Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs

  • 2 tbsp sugar

  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream

For the Topping:

  • 2 cups fresh strawberries, sliced
  • 2 cups fresh kiwi, sliced
  • 1/4 cup sugar
  • Juice of 1 lemon

For the Optional Glaze:

  • 1/2 cup strawberry or kiwi jam
  • 1 tbsp water

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the pan to form a crust.
  3. Beat cream cheese and sugar until smooth. Mix in vanilla extract.
  4. Add eggs one at a time, beating after each addition. Stir in sour cream until creamy.
  5. Pour filling over the crust and smooth the top.
  6. Bake for 50-60 minutes until set. Let cool in the oven for 1 hour.
  7. Toss strawberries and kiwi with sugar and lemon juice. Let sit for 10-15 minutes.
  8. Top cooled cheesecake with fruit mixture.
  9. For glaze, heat jam with water until melted. Drizzle over the fruit topping if desired.
  10. Refrigerate for at least 4 hours before serving.
