Ingredients

  • 1 package (3 oz) strawberry-flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 can (20 oz) crushed pineapple, drained
  • 2 cups mini marshmallows
  • 1 cup sliced fresh strawberries
  • 1 cup whipped topping (like Cool Whip)
  • 1/2 cup chopped pecans (optional)
  • 1/2 cup sweetened shredded coconut (optional)

Instructions

  • In a large mixing bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir for about 2 minutes until fully dissolved.
  • Add 1 cup of cold water to the gelatin mixture and stir. Refrigerate for 10-15 minutes or until it starts to slightly thicken but is not fully set.
  • Gently fold in the drained crushed pineapple, mini marshmallows, and sliced strawberries.
  • Add the whipped topping, stirring gently until all ingredients are combined.
