Ingredients

  • 1 box (15.25 oz) strawberry cake mix (plus ingredients listed on the box)
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup chopped pecans
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, diced

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Base Layer: Sprinkle coconut and pecans evenly across the bottom of the prepared baking dish.
  3. Cake Mix: Prepare the cake batter following the box instructions. Pour over the coconut and pecans.
  4. Cream Cheese Mixture: Beat softened cream cheese, melted butter, powdered sugar, and vanilla until smooth.
  5. Swirl: Drop spoonfuls of cream cheese mixture onto the batter. Swirl gently with a knife for the “earthquake” effect.
