Cream Cheese Frosting:

  • 8 oz cream cheese, room temperature
  • ½ cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Strawberry Cookie:

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • ⅓ cup vegetable oil

Instructions

  • Prepare the Strawberry Crunch Topping:
    • Preheat oven to 350°F (175°C).
    • In a bowl, combine vanilla pudding mix, ¼ cup butter, and ¼ cup flour to form a dough. Repeat with strawberry Jello mix in a separate bowl.
    • Lightly combine both doughs for a marbled effect. Spread onto a parchment-lined baking sheet.
    • Bake for 8-11 minutes or until set. Let cool completely, then crumble into small pieces.
  • Make the Cream Cheese Frosting:
    • Beat cream cheese, butter, powdered sugar, and vanilla extract in a bowl until smooth and fluffy. Set aside.
  • Bake the Cookies and Assemble:
    • Preheat oven to 350°F (175°C).
    • Mix strawberry cake mix, eggs, and oil in a bowl until dough forms.
    • Scoop ¼ cup portions onto a parchment-lined baking sheet.
    • Bake for 10-11 minutes or until set. Let cool completely.
    • Frost each cookie with cream cheese frosting. Sprinkle with strawberry crunch topping.
    • Chill in the refrigerator for 1 hour before serving.
