Ingredients

For the Donuts:

  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 ¼ tsp active dry yeast
  • ½ tsp salt
  • ¾ cup warm milk (110°F/45°C)
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • Oil for frying

For the Strawberry Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • ½ cup fresh strawberries, pureed
  • 1 tsp vanilla extract
  • ½ cup heavy cream, whipped

For Coating:

  • ½ cup granulated sugar
  • 1 tsp ground cinnamon (optional)

Instructions

Make the Donut Dough:

  1. In a large bowl, whisk warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter and eggs, mixing well.
  3. Gradually mix in flour and salt until a soft dough forms.
  4. Knead on a floured surface for 5 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Prepare the Strawberry Cheesecake Filling:

  1. Beat cream cheese and powdered sugar until smooth.
  2. Mix in strawberry puree and vanilla extract until combined.
  3. Gently fold in whipped heavy cream for a light, creamy texture.
  4. Transfer to a piping bag and refrigerate until needed.

Shape and Fry the Donuts:

  1. Punch down the risen dough and roll it to ½-inch thickness.
  2. Cut into rounds (about 3 inches) and place on a parchment-lined tray.
  3. Cover and let rise for another 20 minutes.
  4. Heat 2 inches of oil to 350°F (175°C).
  5. Fry donuts in batches, 1-2 minutes per side, until golden brown.
  6. Remove and drain on a paper towel-lined plate.

Fill and Coat the Donuts:

  1. Roll warm donuts in granulated sugar (or cinnamon-sugar mixture).
  2. Use a skewer to make a small hole in the side of each donut.
  3. Pipe chilled strawberry cheesecake filling into the center.

Notes

  • Oil Temperature: Keep the oil at 350°F (175°C) to avoid greasy or undercooked donuts.
  • Storage: Store filled donuts in the fridge for up to 3 days. Unfilled donuts can be frozen.
  • Baking Option: Bake at 375°F (190°C) for 12-15 minutes instead of frying.
