Ingredients
For the Toffee Apple Topping:
- 1/4 cup butter
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 3 tablespoons corn syrup
- 3 large apples, diced
For the Cake Batter:
- 1/2 cup butter
- 1 1/4 cups firmly packed brown sugar
- 4 teaspoons vanilla extract
- 1/3 cup dark corn syrup (or golden syrup)
- 3 large eggs
- 2 cups applesauce
- 2 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground cloves
Instructions
Prepare the Toffee Apple Topping:
- Grease a bundt or tube pan thoroughly. Preheat oven to 350°F (175°C).
- Melt butter in a saucepan, stir in brown sugar and corn syrup, and simmer for 1-2 minutes.
- Remove from heat, add vanilla extract, and fold in diced apples. Spread evenly in the prepared pan.
2. Make the Cake Batter:
- Cream butter, brown sugar, vanilla, and dark corn syrup in a large bowl until fluffy.
- Add eggs one at a time, mixing well after each addition, and blend in applesauce.
- Sift together flour, baking powder, cinnamon, nutmeg, and cloves. Gradually incorporate the dry ingredients into the wet mixture.
3. Assemble and Bake:
- Pour batter over the toffee apple layer in the pan.
- Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake rest for 10-15 minutes, then invert onto a serving plate.
