Ingredients

For the Toffee Apple Topping:

  • 1/4 cup butter
  • 1/2 cup brown sugar

  • 3 large apples, diced

For the Cake Batter:

  • 1/2 cup butter
  • 1 1/4 cups firmly packed brown sugar
  • 4 teaspoons vanilla extract
  • 1/3 cup dark corn syrup (or golden syrup)
  • 3 large eggs
  • 2 cups applesauce
  • 2 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground cloves

Instructions

Prepare the Toffee Apple Topping:

  • Grease a bundt or tube pan thoroughly. Preheat oven to 350°F (175°C).
  • Melt butter in a saucepan, stir in brown sugar and corn syrup, and simmer for 1-2 minutes.
  • Remove from heat, add vanilla extract, and fold in diced apples. Spread evenly in the prepared pan.

2. Make the Cake Batter:

  • Cream butter, brown sugar, vanilla, and dark corn syrup in a large bowl until fluffy.
  • Add eggs one at a time, mixing well after each addition, and blend in applesauce.
  • Sift together flour, baking powder, cinnamon, nutmeg, and cloves. Gradually incorporate the dry ingredients into the wet mixture.

3. Assemble and Bake:

  • Pour batter over the toffee apple layer in the pan.
  • Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake rest for 10-15 minutes, then invert onto a serving plate.
