Description

This easy spinach quiche recipe features a flaky pie crust filled with a rich, cheesy, and savory spinach mixture. Perfect for breakfast, brunch, or a light meal, this dish is packed with flavor from feta, Cheddar, sautéed onions, and garlic. Enjoy warm or at room temperature for a versatile and satisfying meal!

Ingredients

  • ½ cup butter
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 (4.5-ounce) can mushrooms, drained
  • 1 (6-ounce) package herb and garlic feta, crumbled
  • 1 (8-ounce) package shredded Cheddar cheese, divided
  • Salt and pepper to taste
  • 1 deep-dish pie shell
  • 4 eggs
  • 1 cup milk

Instructions

  • Preheat Oven: Set oven to 375°F (190°C).
  • Sauté Aromatics: Melt butter in a skillet over medium heat. Add onions and garlic; cook until lightly browned (about 7 minutes).
  • Prepare Filling: Stir in spinach, mushrooms, feta, and half of the Cheddar cheese. Season with salt and pepper.
  • Assemble Quiche: Transfer mixture into the pie shell. In a bowl, whisk eggs and milk. Pour over the filling. Sprinkle remaining Cheddar on top.
  • Bake: Place in the oven and bake until the filling is set and the top is golden brown (about 45 minutes).
  • Serve: Let cool slightly before slicing. Enjoy!

Notes

  • For a low-carb version, omit the crust and bake the filling in a greased dish.
  • Cheese Variations: Swap Cheddar for Swiss, Gruyère, or Monterey Jack.
  • Make Ahead: Prepare and bake in advance; reheat or serve at room temperature.
  • Prevent Soggy Crust: Blind bake the pie shell for 10 minutes before adding the filling.
