Ingredients

  • For the Pizza Dough:

    • 2 cups all-purpose unbleached flour
    • 3/4 cup warm water
    • 1 teaspoon yeast
    • 1 teaspoon salt
  • For the Garlic-Infused Oil:

    • 2 tablespoons olive oil
    • 2 garlic cloves, minced
    • Pinch of salt
  • For the Chicken Topping:

    • 1 chicken breast, chopped into bite-sized pieces
    • 1 tablespoon crushed New Mexican chile (or your choice of chili powder)
    • 1/2 teaspoon chipotle powder (optional)
    • 1/4 teaspoon salt
    • Freshly ground black pepper
    • 1 tablespoon olive oil
  • For Assembling the Pizza:

    • 1 cup pickled jalapenos
    • 1 cup cubed mozzarella cheese
    • Optional garnishes: chopped cilantro, crema, additional pickled jalapenos

Instructions

  • Prepare the Dough: Dissolve yeast in warm water, then mix in flour and salt. Knead the dough until smooth. Cover and let rise for 1-2 hours, or at least 30 minutes for a quicker rise.

  • Make the Garlic-Infused Oil: Combine olive oil, minced garlic, and a pinch of salt. Let it sit to infuse the flavors.

  • Cook the Chicken: Toss chicken with crushed New Mexican chile, chipotle powder, salt, pepper, and olive oil. Sauté over medium-high heat until cooked through.

  • Assemble the Pizza: Preheat oven to 400°F (200°C). Divide dough in half, rolling each portion into a thin 10” pizza. Pre-bake crusts for 1-2 minutes.

  • Add Toppings: Spread garlic-infused oil on the pre-baked crusts. Top with cooked chicken, mozzarella, and pickled jalapenos.

  • Bake: Bake at 400°F (200°C) for 8-10 minutes or until edges are golden and cheese is melted.

  • Serve: Garnish with chopped cilantro, crema, or extra pickled jalapenos. Slice and enjoy!

Notes

  • For a vegetarian option, skip the chicken and opt for toppings like bell peppers, mushrooms, or onions.
  • Try using pepper jack cheese for extra spice.
  • Gluten-free pizza dough can be used for dietary needs.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F for 5-7 minutes.
