- 1/4 cup unsalted butter, melted
- 2 tablespoons honey

- Prepare the Batter: In a mixing bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together buttermilk, melted butter, honey, egg, and vanilla extract (if using). Gradually combine the wet ingredients with the dry ingredients, stirring gently until just mixed.
- Heat the Oil: Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
