Ingredients

For the Steak:

  • 4 tenderized cube steaks
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper (to taste)
  • 2 large eggs
  • 1/4 cup milk
  • Vegetable oil (for frying)

For the Gravy:

  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • Salt and freshly ground black pepper (to taste)

Instructions

Prepare the Coating:

  1. In a shallow dish, mix flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In another dish, whisk eggs with 1/4 cup milk to make an egg wash.

Coat the Steaks:

  1. Dredge each cube steak in the flour mixture, coating evenly.
  2. Dip into the egg wash, letting excess drip off.
  3. Return to the flour mixture for a second coating, pressing firmly for a thick crust.

Fry the Steaks:

  1. Heat 1/4 inch of vegetable oil in a large skillet over medium heat.
  2. Fry steaks for about 4 minutes per side, until golden brown and crispy.
  3. Transfer to a plate lined with paper towels to drain excess oil.

Prepare the Gravy:

  1. Pour off excess oil, leaving about 2 tablespoons in the skillet.
  2. Stir in flour and cook over medium heat for 2 minutes, forming a roux.
  3. Slowly whisk in milk, stirring continuously to avoid lumps.
  4. Simmer until thickened, seasoning with salt and pepper to taste.

Serve:

  1. Plate the fried steaks and generously ladle gravy over the top. Serve immediately.

Notes

  • For extra crispy steaks, let them rest for 10 minutes before frying.
  • Add a pinch of cayenne to the flour for a spicy kick.
