Ingredients
For the Steak:
- 4 tenderized cube steaks
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper (to taste)
- 2 large eggs
- 1/4 cup milk
- Vegetable oil (for frying)
For the Gravy:
- 2 tablespoons all-purpose flour
- 2 cups milk
- Salt and freshly ground black pepper (to taste)
Instructions
Prepare the Coating:
- In a shallow dish, mix flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
- In another dish, whisk eggs with 1/4 cup milk to make an egg wash.
Coat the Steaks:
- Dredge each cube steak in the flour mixture, coating evenly.
- Dip into the egg wash, letting excess drip off.
- Return to the flour mixture for a second coating, pressing firmly for a thick crust.
Fry the Steaks:
- Heat 1/4 inch of vegetable oil in a large skillet over medium heat.
- Fry steaks for about 4 minutes per side, until golden brown and crispy.
- Transfer to a plate lined with paper towels to drain excess oil.
Prepare the Gravy:
- Pour off excess oil, leaving about 2 tablespoons in the skillet.
- Stir in flour and cook over medium heat for 2 minutes, forming a roux.
- Slowly whisk in milk, stirring continuously to avoid lumps.
- Simmer until thickened, seasoning with salt and pepper to taste.
Serve:
- Plate the fried steaks and generously ladle gravy over the top. Serve immediately.
Notes
- For extra crispy steaks, let them rest for 10 minutes before frying.
- Add a pinch of cayenne to the flour for a spicy kick.
- Leftovers can be stored in the refrigerator for up to 3 days.
