Description

Delight in these Soft Peanut Butter Cookies, featuring a buttery, melt-in-your-mouth texture and a rich, nutty flavor. Perfect for peanut butter lovers, these cookies are quick, easy, and utterly irresistible!

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Prepare the Dough:
    • In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the egg and vanilla extract, mixing until fully incorporated.
  • Combine Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Shape the Cookies:
    • Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
    • Use a fork to press each dough ball in a crisscross pattern, slightly flattening them.
  • Bake:
    • Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden. Avoid overbaking to maintain a soft texture.
  • Cool and Serve:
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra nutty flavor, sprinkle the tops with chopped peanuts before baking.
  • To make these gluten-free, substitute the all-purpose flour with a gluten-free 1:1 baking flour.
  • Store cookies in an airtight container at room temperature for up to a week.
