This easy comfort food recipe is perfect for a weeknight dinner and can be customized with different cheeses or spices. Serve it with rice, pasta, or veggies for a complete meal!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mozzarella cheese, shredded
  • 1 cup sour cream
  • ½ cup Parmesan cheese, grated
  • 1 tbsp cornstarch
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Fresh parsley (for garnish)

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a shallow baking dish.
  • Prepare Sauce: In a bowl, mix sour cream, Parmesan cheese, cornstarch, oregano, basil, garlic powder, salt, and black pepper until well combined.
  • Arrange Chicken: Place the chicken breasts in the prepared baking dish and sprinkle with mozzarella cheese.
  • Smother with Sauce: Spread the sour cream mixture over the chicken, ensuring even coverage. Sprinkle with additional Parmesan cheese.
  • Bake: Place the dish in the oven and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Garnish & Serve: Remove from the oven, let it rest for a few minutes, and garnish with fresh parsley. Serve hot with your favorite sides.

Notes

  • For extra flavor, marinate the chicken in salt, pepper, and a little olive oil before baking.
  • If using chicken thighs, adjust the cooking time as they may take longer.
  • For a spicy kick, add red pepper flakes or chili powder to the sauce.
  • Greek yogurt can be used as a substitute for sour cream for a lighter version.
