Ingredients

  • 5 pounds Yukon Gold potatoes
  • 8 tablespoons salted butter, softened
  • 8 tablespoons cream cheese, softened
  • ½ cup heavy cream
  • ½ teaspoon salt (more to taste)

Instructions

  • Boil the Potatoes – Bring a large pot of salted water to a boil. Add whole, unpeeled potatoes and cook for 15-20 minutes, until fork-tender.
  • Mash the Potatoes – Drain and mash until mostly smooth.
  • Mix in Dairy – Add butter, cream cheese, and heavy cream. Stir gently to combine, avoiding over-mixing. Season with additional salt to taste.
  • Prepare for Smoking – Spread mashed potatoes evenly in a 12-inch cast iron skillet.
  • Smoke the Potatoes – Preheat smoker to 225°F with mild hardwood (pecan or alder). Smoke for 1 hour.
