Ingredients

  • ½ cup apple cider vinegar
  • ⅓ cup soy sauce
  • 12 whole garlic cloves, peeled
  • 3 tablespoons vegetable oil
  • 4 bone-in, skin-on chicken thighs
  • 4 chicken drumsticks
  • 12 whole bird’s-eye or Thai chilies
  • 1 tablespoon black peppercorns
  • 23 dried bay leaves
  • 1 tablespoon sliced scallion tops (for garnish)

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together the vinegar and soy sauce. Pour the mixture into a 6-quart slow cooker and add the peeled garlic cloves.
  2. Brown the Chicken: Heat vegetable oil in a skillet over medium heat. Brown the chicken thighs and drumsticks on all sides, then transfer them to the slow cooker, turning to coat in the sauce.
  3. Add Spices: Place the chilies, peppercorns, and bay leaves into the slow cooker with the chicken.
  4. Cook: Cover and cook on low for 5-6 hours or until the chicken is tender.
  5. Serve: Garnish with sliced scallion tops and serve hot over steamed rice.
