Description

These simple oatmeal protein cookies are soft, chewy, and packed with nutritious ingredients like rolled oats, peanut butter, and chia seeds. Perfect for a healthy breakfast or snack, they’re vegan, gluten-free, and ready in just 25 minutes.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ⅓ cup pure maple syrup
  • 2 tablespoons ground flaxseed
  • 2 tablespoons chia seeds
  • ½ cup unsweetened applesauce
  • ½ cup peanut butter

Instructions

  • Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine all the ingredients until well mixed.
  • Shape the mixture into 12 balls and place them on the prepared baking sheet. Flatten each ball slightly to form a cookie shape.
  • Bake for 15 minutes.
  • Allow the cookies to cool on the baking sheet before serving.

Notes

  • Use almond butter as an alternative to peanut butter for a different flavor profile.
  • Add a handful of raisins or chocolate chips for extra texture and sweetness.
