- 1 whole orange (medium-sized, washed, quartered, seeds removed)
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup olive oil (or vegetable oil)
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
Optional Glaze or Topping:
- 1/2 cup powdered sugar
- 2–3 tablespoons fresh orange juice
- Zest of 1 orange
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment paper.
- In a blender or food processor, blend the whole orange (peel included), eggs, sugar, and oil until smooth.
- In a mixing bowl, whisk together flour, baking powder, and salt. Add the orange mixture and stir gently until just combined. Do not overmix.
- Pour batter into the prepared pan and smooth the top.
- Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Optional Glaze: Mix powdered sugar and orange juice until smooth. Drizzle over the cooled cake and top with orange zest.
