Ingredients

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper

For the Mango Salsa:

  • 1 mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup chopped cilantro
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Lime-Chili Sauce:

  • 1/4 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp salt
  • 1/8 tsp black pepper

For the Bowls:

  • 1 cup cooked rice
  • 1/2 avocado, sliced

Instructions

  • Grill the Shrimp:
    • Preheat the grill to medium-high heat.
    • Toss shrimp with olive oil, garlic powder, onion powder, salt, and pepper.
    • Grill for 2–3 minutes per side until pink and cooked through.
  • Prepare the Mango Salsa:
    • Combine mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl.
    • Mix well and set aside.
  • Make the Lime-Chili Sauce:
    • In a small bowl, whisk together mayonnaise, sriracha, lime juice, garlic powder, onion powder, salt, and pepper until smooth.
  • Assemble the Bowls:
    • Divide cooked rice into serving bowls.
    • Top with grilled shrimp, mango salsa, and sliced avocado.
    • Drizzle generously with lime-chili sauce. Serve and enjoy!
