- 1/2 cup powdered sugar
- 1 teaspoon peppermint extract
- 1 1/2 cups whipped topping (like Cool Whip), divided
- Green food coloring
- 1/4 cup mini chocolate chips (optional)
- For garnish (optional):
- Whipped cream
- Mini chocolate chips
- Chocolate shavings or sprinkles
Instructions
- Prepare the crust – In a medium bowl, combine chocolate sandwich cookie crumbs and melted butter. Mix until evenly coated and press into the bottom and sides of a 9-inch pie pan. Refrigerate for at least 20 minutes to set.
- Make the filling – Beat softened cream cheese, powdered sugar, and peppermint extract in a large bowl until smooth. Fold in 1 cup of whipped topping.
- Create the swirl – Split the filling into two bowls. Leave one white and add green food coloring to the other, stirring until the desired shade is achieved.
- Assemble the pie – Alternately spoon green and white filling into the crust. Use a butter knife or skewer to swirl the colors together for a marbled effect.
- Chill and garnish – Refrigerate the pie for at least 4 hours (or overnight). Before serving, top with remaining whipped topping and garnish with mini chocolate chips, chocolate shavings, or sprinkles if desired.
