This no-bake Shamrock Swirl Pie is a creamy, mint-chocolate dessert perfect for St. Patrick’s Day or any occasion! With a rich chocolate cookie crust, a smooth mint-flavored filling, and a stunning chocolate swirl on top, this indulgent treat is as beautiful as it is delicious.

Ingredients

For the Crust:

  • 1 ½ cups chocolate cookie crumbs (like Oreos)
  • 6 tbsp unsalted butter, melted

For the Filling:

  • 8 oz (1 package) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp peppermint extract
  • A few drops of green food coloring
  • 1 cup heavy whipping cream, whipped (or 1 tub whipped topping)
  • ¼ cup melted chocolate

For Garnish:

  • Whipped cream
  • Chocolate shavings or chips
  • Green sprinkles or edible glitter

Instructions

Step 1: Make the Crust

  1. In a bowl, mix the chocolate cookie crumbs and melted butter until combined.
  2. Press the mixture into the bottom of a 9-inch pie dish.
  3. Place in the fridge for 15–20 minutes to set.

Step 2: Prepare the Filling

  1. In a large bowl, beat the cream cheese and powdered sugar until smooth.
  2. Add the peppermint extract and green food coloring, mixing until evenly colored.
  3. Fold in the whipped cream until fluffy and well combined.

Step 3: Swirl in the Chocolate

  1. Pour the filling into the chilled crust and smooth the top.
  2. Drizzle the melted chocolate over the filling.
  3. Use a toothpick or knife to create a beautiful swirled pattern.

Step 4: Chill & Garnish

  1. Refrigerate the pie for at least 4 hours (or overnight) to set.
  2. Before serving, top with whipped cream, chocolate shavings, and green sprinkles for a festive touch!

Notes

  • For an extra minty kick, use mint Oreos for the crust.
