Ingredients

For the crust:

  • 1 package refrigerated pie crusts
  • 1 egg white
  • Green sprinkles

For the filling:

  • 1 package (3 ounces) lime gelatin
  • 1¼ cups boiling water
  • 2 cartons (6 ounces each) key lime yogurt
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • Green food coloring (optional)

For assembly:

  • Cookie sticks
  • Decorative straws (optional)

Instructions

  • Prepare the Crust: Preheat your oven to 425°F (220°C). Roll out the pie crusts and use a shamrock-shaped cookie cutter to cut out shapes.
  • Prepare the Filling: In a bowl, dissolve the lime gelatin in boiling water. Stir in the key lime yogurt and fold in the whipped topping. Add a drop of green food coloring if desired.
  • Assemble the Pops: Place a shamrock-shaped crust on a baking sheet, spread a layer of the filling, and press a cookie stick into the center. Top with another crust and press the edges with a fork to seal.
  • Add Egg Wash and Sprinkles: Beat the egg white until fluffy, add a drop of green food coloring, and brush over the top crust. Sprinkle with green sprinkles.
  • Bake: Bake for about 10 minutes or until lightly browned. Let them cool, then insert into decorative straws if desired.
