Description

Celebrate St. Patrick’s Day with these refreshing Shamrock Cucumber Tea Sandwiches! Made with creamy cheese, crisp cucumber, and soft English muffins shaped like shamrocks, these sandwiches are the perfect festive treat. Easy to prepare and full of flavor, they’re a hit at any St. Paddy’s Day gathering.

Ingredients

  • 3 English muffins
  • ½ English cucumber, thinly sliced (18 slices, 3 per shamrock)
  • 4 oz cream cheese, softened
  • ½ cup shredded Monterey Jack cheese
  • 1 garlic clove, pressed
  • Salt, to taste
  • Fresh parsley (flat-leaf, not curly)
  • ½ green bell pepper, thinly sliced

Instructions

  • Prepare the Cheese Spread: In a bowl, mix the softened cream cheese, shredded Monterey Jack cheese, pressed garlic, and salt until smooth and well combined.
  • Shape the Muffins: Split the English muffins in half. Cut 3 small triangles on each half to form a shamrock shape, being careful not to cut too close to the center.
  • Assemble the Sandwiches: Spread the cheese mixture evenly over each muffin half.
  • Add Cucumber and Garnish: Place 3 cucumber slices on each shamrock (one per “leaf”), add a slice of green bell pepper as the stem, and garnish with a parsley leaf on top

Notes

  • Bread Options: Swap the English muffins for your preferred bread type, including gluten-free options.
  • Herb Additions: Minced fresh herbs like dill or chives can be added to the cheese spread for extra flavor.
  • Storage: Keep the components in separate airtight containers in the fridge for up to a day. Assemble just before serving for the freshest sandwiches.
