Ingredients

  • 2 cups pecan halves, toasted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt (plus extra for sprinkling)

Instructions

  1. Prepare the Pecans: Line a baking sheet with parchment paper and arrange the toasted pecans in small clusters (3-4 pecans each). Set aside.
  2. Make the Praline Mixture: In a medium saucepan, combine the granulated sugar, brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly, until the butter melts and the mixture begins to boil.
  3. Boil and Thicken: Attach a candy thermometer to the pan. Boil, stirring frequently, until the mixture reaches 238°F (114°C), the soft-ball stage. Remove from heat.
  4. Add Flavoring: Stir in the vanilla extract and 1/2 teaspoon sea salt. Let it cool for 1-2 minutes until it thickens but is still pourable.
  5. Form Clusters: Using a spoon, drizzle the praline mixture over the pecan clusters, ensuring they are well coated.
  6. Sprinkle with Sea Salt: While the mixture is still warm, sprinkle each cluster with a pinch of sea salt.
  7. Cool and Set: Let the clusters cool at room temperature for about 30 minutes before serving.
