Ingredients
For the Base:
- 3 Medjool dates (soaked in hot water for 5 minutes, drained)
- 1 cup roasted almonds
- 1/2 cup walnuts
For the Caramel Layer:
- 1 cup Medjool dates (soaked in hot water for 5 minutes, drained)
- 1/3 cup peanut butter
- 3/4 cup oat milk
- 1/4 cup salted caramel (or vanilla) protein powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Prepare the Base:
- Blend soaked dates, roasted almonds, and walnuts in a food processor until smooth.
- Press the mixture into molds in a silicone muffin tray to form the crust.
- Refrigerate to set.
- Prepare the Caramel Layer:
- Blend soaked dates, peanut butter, oat milk, protein powder, vanilla extract, and salt in a food processor until smooth.
- Assemble the Tarts:
- Pour the caramel mixture over the prepared base.
- Smooth the tops with a spoon for an even layer.
- Freeze for at least 3 hours to set.
- Serve:
- Remove the tarts from the silicone tray and let them sit at room temperature for about 30 minutes before serving.
Notes
- For a nut-free base, substitute almonds and walnuts with sunflower seeds or pumpkin seeds.
- Experiment with different protein powder flavors to customize the taste.
