Ingredients

For the Base:

  • 3 Medjool dates (soaked in hot water for 5 minutes, drained)
  • 1 cup roasted almonds
  • 1/2 cup walnuts

For the Caramel Layer:

  • 1 cup Medjool dates (soaked in hot water for 5 minutes, drained)
  • 1/3 cup peanut butter
  • 3/4 cup oat milk
  • 1/4 cup salted caramel (or vanilla) protein powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Prepare the Base:
    • Blend soaked dates, roasted almonds, and walnuts in a food processor until smooth.
    • Press the mixture into molds in a silicone muffin tray to form the crust.
    • Refrigerate to set.
  • Prepare the Caramel Layer:
    • Blend soaked dates, peanut butter, oat milk, protein powder, vanilla extract, and salt in a food processor until smooth.
  • Assemble the Tarts:
    • Pour the caramel mixture over the prepared base.
    • Smooth the tops with a spoon for an even layer.
    • Freeze for at least 3 hours to set.
  • Serve:
    • Remove the tarts from the silicone tray and let them sit at room temperature for about 30 minutes before serving.

Notes

  • For a nut-free base, substitute almonds and walnuts with sunflower seeds or pumpkin seeds.
