Description

Ingredients

  • 1 lb fresh salmon, skin removed (sushi-grade or extremely fresh caught)
  • 1 Tbsp olive oil
  • ¼ small red onion, very finely diced (about 3 Tbsp)
  • 1 heaping Tbsp capers, drained and roughly chopped
  • ½ small jalapeño, finely diced
  • 1 tsp Dijon mustard
  • 1 lemon (about 1 tsp lemon zest and 2-3 Tbsp fresh lemon juice)
  • 2 tsp fresh chives, thinly sliced

Instructions

  • Optional Step: Freeze salmon for 15 minutes to make dicing easier.
  • Prepare the Salmon: Pat the salmon dry. Cut into ¼-inch planks, strips, and then cubes. Place in a bowl.
  • Combine Ingredients: Add olive oil, red onion, capers, jalapeño, Dijon mustard, lemon zest, lemon juice, and chives to the salmon. Mix thoroughly.
  • Marinate: Let the mixture rest for 5-10 minutes to blend flavors. Adjust seasoning with salt or pepper if needed.
  • Serve: Use a ring mold for a polished presentation or serve with crackers, crostini, or salad greens.
