Ingredients
- 1 lb fresh salmon, skin removed (sushi-grade or extremely fresh caught)
- 1 Tbsp olive oil

- 1 heaping Tbsp capers, drained and roughly chopped
- ½ small jalapeño, finely diced
- 1 tsp Dijon mustard
- 1 lemon (about 1 tsp lemon zest and 2-3 Tbsp fresh lemon juice)
- 2 tsp fresh chives, thinly sliced
Instructions
- Optional Step: Freeze salmon for 15 minutes to make dicing easier.
- Prepare the Salmon: Pat the salmon dry. Cut into ¼-inch planks, strips, and then cubes. Place in a bowl.
- Combine Ingredients: Add olive oil, red onion, capers, jalapeño, Dijon mustard, lemon zest, lemon juice, and chives to the salmon. Mix thoroughly.
- Marinate: Let the mixture rest for 5-10 minutes to blend flavors. Adjust seasoning with salt or pepper if needed.
