Ingredients

  • 1 shallot, peeled and very thinly sliced into rings
  • Zest from 1 orange, finely grated (divided)
  • Zest from 1 lemon, finely grated (divided)
  • 23 tbsp + ½ cup extra-virgin olive oil (divided)
  • 1 to lb. salmon fillet
  • Salt, to taste
  • ½ cup chopped cilantro
  • ½ cup chopped parsley
  • 1 small garlic clove, finely minced or grated
  • ½ tsp smoked paprika
  • ½ tsp chili flakes
  • ½ cup green olives, pitted and chopped (approx. 10 olives)
  • Juice from 1 orange
  • Juice from 1 lemon

Instructions

  • Preheat the Oven: Preheat your oven to 250°F (121°C).
  • Prepare the Salmon: Combine shallots, half of the orange and lemon zest, and 2–3 tablespoons of olive oil in a small baking dish. Season the salmon with salt and coat it with the zest and oil mixture.
  • Roast the Salmon: Roast in the oven for 30–35 minutes, or until the salmon is opaque and flakes easily with a fork. Adjust cooking time based on the fillet’s thickness.
  • Prepare the Salsa Verde: While the salmon roasts, mix cilantro, parsley, garlic, smoked paprika, chili flakes, green olives, remaining citrus zest, ½ cup olive oil, and citrus juices. Season with salt to taste.
  • Serve: Top the roasted salmon with the salsa verde and serve immediately.
