Ingredients
- 1 shallot, peeled and very thinly sliced into rings
- Zest from 1 orange, finely grated (divided)
- Zest from 1 lemon, finely grated (divided)
- 2–3 tbsp + ½ cup extra-virgin olive oil (divided)
- 1 to 1½ lb. salmon fillet
- Salt, to taste
- ½ cup chopped cilantro
- ½ cup chopped parsley
- 1 small garlic clove, finely minced or grated
- ½ tsp smoked paprika
- ½ tsp chili flakes
- ½ cup green olives, pitted and chopped (approx. 10 olives)
- Juice from 1 orange
- Juice from 1 lemon
Instructions
- Preheat the Oven: Preheat your oven to 250°F (121°C).
- Prepare the Salmon: Combine shallots, half of the orange and lemon zest, and 2–3 tablespoons of olive oil in a small baking dish. Season the salmon with salt and coat it with the zest and oil mixture.
- Roast the Salmon: Roast in the oven for 30–35 minutes, or until the salmon is opaque and flakes easily with a fork. Adjust cooking time based on the fillet’s thickness.
- Prepare the Salsa Verde: While the salmon roasts, mix cilantro, parsley, garlic, smoked paprika, chili flakes, green olives, remaining citrus zest, ½ cup olive oil, and citrus juices. Season with salt to taste.
- Serve: Top the roasted salmon with the salsa verde and serve immediately.
