Description

These Redneck Egg Rolls are a crispy, savory treat filled with seasoned beef, creamy coleslaw, and tangy barbecue sauce. Easy to make and versatile for gatherings or casual meals, these egg rolls can be customized with different fillings or dipping sauces.


Ingredients

  • 1 lb cooked beef (shredded or chopped)
  • 2 cups coleslaw (pre-made or homemade)
  • 1/2 cup barbecue sauce (your favorite variety)
  • 1012 egg roll wrappers
  • Vegetable oil (for frying)

Instructions

  • If not already shredded, prepare the beef by chopping or shredding it into bite-sized pieces.
  • In a large bowl, combine the beef, coleslaw, and barbecue sauce, mixing well.
  • Place an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of the beef mixture into the center.
  • Dampen the edges of the wrapper with water or egg wash. Fold in the sides and roll tightly to seal the egg roll.
  • Repeat the process until all egg rolls are assembled. Refrigerate for at least 1 hour before frying.
  • Heat vegetable oil in a large pot to 350°F (175°C). Fry the egg rolls in batches for 8-10 minutes until golden brown and crispy, turning occasionally.
  • Remove from the oil and place on a paper towel-lined plate to drain excess oil.
  • Serve with your favorite dipping sauces, such as barbecue sauce or ranch.

Notes

  • You can adjust the spiciness of the filling by adding jalapeños or hot sauce.
  • If you prefer a cheese-filled version, mix shredded cheese into the beef mixture.
  • Freezing assembled egg rolls is an option, just freeze them on a baking sheet and then transfer them to a freezer-safe bag for up to 3 months.
