Ingredients
- 1 lb cooked beef (shredded or chopped)
- 2 cups coleslaw (pre-made or homemade)
- 1/2 cup barbecue sauce (your favorite variety)
- 10–12 egg roll wrappers
- Vegetable oil (for frying)
Instructions
- If not already shredded, prepare the beef by chopping or shredding it into bite-sized pieces.
- In a large bowl, combine the beef, coleslaw, and barbecue sauce, mixing well.
- Place an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of the beef mixture into the center.
- Dampen the edges of the wrapper with water or egg wash. Fold in the sides and roll tightly to seal the egg roll.
- Repeat the process until all egg rolls are assembled. Refrigerate for at least 1 hour before frying.
- Heat vegetable oil in a large pot to 350°F (175°C). Fry the egg rolls in batches for 8-10 minutes until golden brown and crispy, turning occasionally.
- Remove from the oil and place on a paper towel-lined plate to drain excess oil.
- Serve with your favorite dipping sauces, such as barbecue sauce or ranch.
Notes
- You can adjust the spiciness of the filling by adding jalapeños or hot sauce.
