Description
Air fryer zucchini fritters are a healthy, crispy snack or side dish made with fresh zucchini, savory cheeses, and herbs. Perfectly cooked in the air fryer, these fritters are light, delicious, and easy to make without excessive oil.
Ingredients
- 2–3 medium zucchinis, shredded
- 1 tsp salt
- 2 large eggs, beaten
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Cooking spray or a small amount of oil for brushing
Instructions
- Prepare the Zucchini: Grate zucchinis, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid using a kitchen towel.
- Mix the Batter: Combine shredded zucchini, beaten eggs, breadcrumbs, Parmesan, mozzarella, garlic powder, and black pepper in a bowl. Mix until well combined.
- Form the Fritters: Shape 2 tablespoons of the mixture into small patties. Repeat until all batter is used.
- Preheat Air Fryer: Set to 375°F (190°C) and preheat for 3-5 minutes.
- Cook the Fritters: Lightly spray the air fryer basket with oil. Place fritters in a single layer without touching. Spray the tops with oil. Cook for 9 minutes, flip, and cook an additional 8-9 minutes until golden brown.
- Serve: Let fritters rest for 5 minutes. Serve warm with a dipping sauce.
