Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, at room temperature
  • ¼ cup whole milk, at room temperature
  • 1 cup fresh raspberries
  • ¾ cup white chocolate chips

For the Glaze:

  • ½ cup white chocolate chips
  • 2 tbsp heavy cream
  • Fresh raspberries (for garnish)

Instructions

  • Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large bowl, cream the butter and sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
    • Stir in sour cream and milk until combined.
    • Gradually fold the dry ingredients into the wet mixture until just combined.
    • Gently fold in raspberries and white chocolate chips, being careful not to overmix.
    • Pour batter into the prepared loaf pan and smooth the top.
    • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
    • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Glaze:
    • In a small saucepan, melt white chocolate chips and heavy cream over low heat, stirring constantly until smooth.
    • Drizzle the glaze over the cooled cake.
  • Garnish:
    • Garnish with fresh raspberries and serve.

Notes

  • Toss raspberries in a bit of flour to prevent sinking in the batter.
  • The cake can be enjoyed plain if you prefer to skip the glaze.
