Ingredients
For the Quiche:
- 2 tbsp canola oil
- 1 Vidalia onion, finely diced
- 24 oz ground breakfast sausage
- 1 pie crust dough (deep dish frozen pie shell recommended)
- 6 eggs
- 1/2 cup sour cream
- 1/2 cup heavy whipping cream
- Salt and pepper to taste
- 2/3 of the cooked sausage and onion mixture
For the Sausage Gravy:
- Remaining 1/3 of the cooked sausage and onion mixture
- 1/4 cup all-purpose flour
- 2 cups whole milk
- Salt and pepper to taste

Prepare the sausage mixture: Preheat a pan over medium heat and sauté onions in canola oil until transparent. Add the ground sausage and cook until browned. Set aside.

Prepare the quiche: Preheat the oven to 350°F (175°C). Grease a deep dish pie pan and fit the pie crust into it.

Make the egg mixture: In a large bowl, whisk together the eggs, sour cream, heavy cream, salt, and pepper. Stir in 2/3 of the sausage and onion mixture.

Assemble the quiche: Pour the egg mixture into the pie crust, spreading it evenly.

Bake the quiche: Bake the quiche for 40-45 minutes, or until the center is set and no longer jiggles.

Make the sausage gravy: While the quiche is baking, heat the remaining sausage mixture in a pan. Stir in the flour and cook for 1-2 minutes. Slowly add the milk while stirring constantly. Cook until the gravy thickens. Season with salt and pepper to taste.
